Corned Beef for st. Patty’s day
by
4 -4 5 lbs. Corned Beef
1 can beef broth
1 16 oz. coke
1 onion chopped
2 or 3 potatoes
2 or 3 chopped carrots
3 T. brown mustard
Slurry made with 2/3 C. flour mixed with enough water to make liquid.
Add spices to taste such as peppercorns, ginger, papirika, thyme, red crushed pepper.
Put all of this in crockpot and cook 4 – 6 hours.
Hot corn dip
by
3 cans drained shoepeg corn
8 oz. cream cheese
1 bunch chopped green onions
1 stick melted butter
1/2 – 1 C. melted butter
1/2 C. chopped canned jalpeno peppers. Add a little of the juice. Place all ingredients in microwave safe bowl and microwave a couple of minutes. Salt and pepper to taste. Stir and put in microwave until hot and cheese melts. Stir every minute to be sure you don’t over cook. Serve with chips of choice.

Individual quiches

Shred 1 potato and two or 3 small carrots. Add 4 beaten eggs with 3/4 large can of evap. milk. Add potatoes, carrots, salt and pepper to taste, 1 cup shredded cheddar cheese, 1 T. vinegar, 1 T. parsley and chives, smoked sausage ( 1 C.) Pour into 8 – 10 individual loaf plans. Cook in 425 oven for about 30 minutes.
Line individual loaf pans with pie crust.
Black skillet apple crisp

Apple crisp
Put in 4 or 5 peeled, sliced, firm apples
Zest and juice of 1 large lemon
1 t. cinnamon
1/2 t. nutmeg and/ or cloves
add 1/2 C. walnuts to apples
Top with oatmeal mixture. Chop up more butter on top. Cook in 350 over for 45 min.
Topping
3/4 C. Flour
1/ t. salt
1 C. brown sugar
3/4 C. oats
1 stick butter cut into cubes
Blend these ingredients with knives or in food processor.
Then add 3/4 C. walnuts
Use What’cha Got Bean Soup
by
Saute the following in a large sauce pan (several quart size):
1/3 stick butter
1/3 C. olive oil
1 bunch green onions
1 large chopped onion
1 head of garlic
Then add
1 bag of fresh greens (spinach, turnip green, kale or whatever you have.
1 package smoked sausage sliced
ham hock or leftover ham bone (better with some meat still on in it)
1 quart chicken broth
2 cans of white beans (great northern, navy beans, white butter beans or what’cha got.)
1 large can crushed tomatoes
1 can whole kernel corn.
season to taste. For heat, you can add chili pepper, crushed pepper, or texas pete.
Bring to boil; then turn to simmer, and cook for a couple of hours or more. You can even put it in crockpot to cook all day if you need to hil going to work.
